Ingredients

  • 250 grams purple yam (kand), peeled
  • 1½ cups gram flour (besan)
  • 1 tablespoon rice flour
  • A pinch of asafoetida
  • ½ teaspoon red chilli powder
  • ½ teaspoon crushed black peppercorns
  • 2 teaspoons coriander powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon roasted cumin powder
  • Salt to taste
  • 2 teaspoons lemon juice
  • A pinch of baking soda
  • Oil for deep frying
  • Chaat masala for sprinkling
  • Tomato ketchup to serve

Method

  1. In a bowl, add gram flour, rice flour, asafoetida, red chilli powder, crushed black peppercorns, coriander powder, turmeric powder, cumin powder, salt, lemon juice and sufficient water, mix well to make a semi-thick batter.
  2. Add baking soda and mix well. Cut thin slices of purple yam and set aside.
  3. Heat sufficient oil in a non-stick pan, dip each slice of purple yam drop in the hot oil.
  4. Deep fry till golden brown and crisp. Drain on an absorbent paper.
  5. Sprinkle some chaat masala and serve hot along with tomato ketchup.
