Ingredients
- 250 grams purple yam (kand), peeled
- 1½ cups gram flour (besan)
- 1 tablespoon rice flour
- A pinch of asafoetida
- ½ teaspoon red chilli powder
- ½ teaspoon crushed black peppercorns
- 2 teaspoons coriander powder
- ¼ teaspoon turmeric powder
- ½ teaspoon roasted cumin powder
- Salt to taste
- 2 teaspoons lemon juice
- A pinch of baking soda
- Oil for deep frying
- Chaat masala for sprinkling
- Tomato ketchup to serve
Method
- In a bowl, add gram flour, rice flour, asafoetida, red chilli powder, crushed black peppercorns, coriander powder, turmeric powder, cumin powder, salt, lemon juice and sufficient water, mix well to make a semi-thick batter.
- Add baking soda and mix well. Cut thin slices of purple yam and set aside.
- Heat sufficient oil in a non-stick pan, dip each slice of purple yam drop in the hot oil.
- Deep fry till golden brown and crisp. Drain on an absorbent paper.
- Sprinkle some chaat masala and serve hot along with tomato ketchup.
