Kadhi Khichdi - SK Khazana

Ingredients list for Kadhi Khichdi - SK Khazana

  • 1 1/2 cups Yogurt
  • 3 tablespoons Gram flour (besan)
  • 2 cups Cooked basmati rice
  • 1/4 teaspoon Turmeric powder
  • 3/4 teaspoon Red chilli powder
  • to taste Salt
  • 1 teaspoon Ghee
  • 1 teaspoon Cumin seeds
  • 1/4 teaspoon Fenugreek seeds (methi dana)
  • 1 inch Ginger finely chopped
  • a pinch Asafoetida
  • 1 medium Onion sliced
  • 1 Dried red chilli
  • 2 tablespoons coriander leaves chopped
  • to serve Papad

Method

  1. Take yogurt, gram flour, turmeric powder, red chilli powder and salt and 1 cup water whisk till smooth.
  2. Heat ghee in a non-stick pan, add cumin seeds and fenugreek seeds and sauté till they change colour. Add ginger and sauté well. Add asafoetida and onion and sauté till translucent and mix well.
  3. Add dried red chilli and mix well. Add the prepared yogurt mixture and mix well. Cook for 2-3 minutes.
  4. Add rice and mix well. Cook for 1-2 minutes. Sprinkle chopped coriander and take the pan off the heat.
  5. Garnish with chopped coriander and serve hot with papads.
