Jhatpat Aloo Ki Sabzi

Ingredients 

  • 4 medium potatoes, peeled and cut into 1 inch pieces
  • 2 medium onions, roughly chopped
  • 2 medium tomatoes, roughly chopped
  • 1 inch ginger piece ,roughly chopped
  • 2 green chillies
  • 6 garlic cloves 
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chilli powder
  • 2 teaspoons coriander powder
  • Salt to taste
  • 1 tablespoon fresh cream
  • 1 tablespoon chopped fresh coriander leaves 
  • 1 inch ginger piece, cut into thin strips

Method

  1. Grind onions, tomatoes, ginger and garlic cloves to a smooth paste.
  2. Heat oil in a pressure cooker, add cumin seeds and as they begin to change colour add the paste and sauté till oil separates.
  3. Add potatoes, turmeric powder, cumin powder, red chilli powder and coriander powder and sauté for two minutes.
  4. Add salt and mix.Add four cups water and stir.
  5. Once the water comes to a boil, close the lid of the cooker and cook under pressure till the pressure is released thrice (3 whistles).
  6. Open the lid once the pressure is completely reduced.
  7. Add fresh cream and coriander leaves and mix well.
  8. Garnish with ginger strips and serve hot with rotis.
