Ingredients list for Hot And Sour Vegetable Soup

  • 4-6 French Beans finely chopped
  • 1/2 medium Carrots grated
  • 2 Button mushrooms finely chopped
  • 1/4 small Cabbage finely chopped
  • 1/2 medium Green capsicum
  • 1 tablespoon Oil
  • 1 Small onions finely chopped
  • 2 inch pieces Celery finely chopped
  • 3 cups Vegetable stock
  • to taste Salt
  • 2 tablespoons Dark soy sauce
  • 2 tablespoons Green chilli sauce
  • to taste Crushed black peppercorns
  • 2 tablespoons Cornflour/ corn starch
  • 1 tablespoon White vinegar
  • 3-4 Garlic finely chopped
  • 1/2 teaspoon Sugar
  • 1 stalk Spring onion greens finely chopped


  1. Heat the oil in a deep non stick pan. Add onion, French beans, carrot, celery, mushrooms, cabbage, ginger, green capsicum and vegetable stock and cook.
  2. Add salt, dark soy sauce, green chilli sauce and mix. Add crushed peppercorns and mix and let the mixture come to a boil.
  3. Mix cornstarch in ½ cup water till smooth and add to the soup. Add ½ tbsp white vinegar and mix. Add garlic, sugar and remaining vinegar and mix well.
  4. Add spring onion greens and mix. Serve piping hot.
