Ingredients list for Green Masala Egg Curry
- 4 Eggs
- 2-3 tablespoons Oil
- 1 teaspoon Cumin seeds
- 1 cup Boiled onion paste
- 1/4 teaspoon Turmeric powder
- 1 teaspoon Coriander powder
- to taste Salt
- 1/2 teaspoon Garam masala powder
- to garnish Fresh coriander sprig
- Green masala
- 1 medium bunch Fresh coriander leaves
- 1 medium bunch Fresh mint leaves
- 1 inch Ginger
- 4-5 cloves Garlic
- 2 Green chillies
- 1 tablespoon Lemon juice
Method
- Boil eggs, cool and peel.
- To make green masala, put coriander leaves, mint leaves, ginger, garlic, green chillies, lemon juice and some water into a blender jar and blend into a fine mixture.
- Heat oil in a non-stick pan, add cumin seeds and sauté till their colour changes. Add onion paste, mix and sauté for 2-3 minutes or till light golden.
- Add turmeric powder and coriander powder, mix and saute for a minute. Add the green masala and mix well. Add salt and ½ cup water, mix and simmer for a minute.
- Make some slits in the eggs and add to the gravy and mix lightly. Add garam masala powder, mix and simmer for 1-2 minutes.
- Transfer into a serving bowl, garnish with a coriander sprig and serve hot.
