Ingredients list for Green Masala Egg Curry

  • 4 Eggs
  • 2-3 tablespoons Oil
  • 1 teaspoon Cumin seeds
  • 1 cup Boiled onion paste
  • 1/4 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • to taste Salt
  • 1/2 teaspoon Garam masala powder
  • to garnish Fresh coriander sprig
  • Green masala
  • 1 medium bunch Fresh coriander leaves
  • 1 medium bunch Fresh mint leaves
  • 1 inch Ginger
  • 4-5 cloves Garlic
  • 2 Green chillies
  • 1 tablespoon Lemon juice

Method

  1. Boil eggs, cool and peel.
  2. To make green masala, put coriander leaves, mint leaves, ginger, garlic, green chillies, lemon juice and some water into a blender jar and blend into a fine mixture.
  3. Heat oil in a non-stick pan, add cumin seeds and sauté till their colour changes. Add onion paste, mix and sauté for 2-3 minutes or till light golden.
  4. Add turmeric powder and coriander powder, mix and saute for a minute. Add the green masala and mix well. Add salt and ½ cup water, mix and simmer for a minute.
  5. Make some slits in the eggs and add to the gravy and mix lightly. Add garam masala powder, mix and simmer for 1-2 minutes.
  6. Transfer into a serving bowl, garnish with a coriander sprig and serve hot.
