Ingredients list for Gajar ki Pachadi

  • 2 medium Carrots grated
  • 2 tablespoons Split skinless green gram (dhuli moong dal) soaked
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Red chilli powder
  • to taste Salt
  • 2 Green chillies chopped
  • 1 teaspoon Lemon juice
  • 1 tablespoon Fresh coconut scraped
  • Fresh coriander leaves chopped ¼ cup + for garnishing
  • 2 teaspoons Ghee
  • 1/2 teaspoon Mustard seeds
  • a pinch Asafoetida

  1. Combine carrots, green gram, turmeric powder, chilli powder, salt, green chillies, lemon juice, coconut and coriander leaves in a bowl. Mix well.
  2. Heat ghee in a non-stick pan. Add mustard seeds and when the seeds splutter, add asafoetida and add to the carrot mixture.
  3. Mix well and serve immediately garnished with coriander leaves.
