Ingredients
- 2 medium carrots, grated
- 2 tablespoons split skinless green gram (dhuli moong dal) soaked
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- Salt to taste
- 2 green chillies, chopped
- 1 teaspoon lemon juice
- 1 tablespoon scraped fresh coconut
- ¼ cup chopped fresh coriander leaves + for garnishing
- 2 teaspoons ghee
- 1/2 teaspoon mustard seeds
- A pinch asafoetida
Method
- Combine carrots, green gram, turmeric powder, chilli powder, salt, green chillies, lemon juice, coconut and coriander leaves in a bowl. Mix well.
- Heat ghee in a non-stick pan. Add mustard seeds and when the seeds splutter, add asafoetida and add to the carrot mixture.
- Mix well and serve immediately garnished with coriander leaves.
