Ingredients list for Coconut Rice

  • 3/4 cup Fresh coconut scraped
  • 1/2 cup Coconut milk
  • 1 1/2 cups Basmati rice soaked for 20 minutes and drained
  • 3 tablespoons Ghee
  • 1 teaspoon Mustard seeds
  • 1/2 teaspoon Cumin seeds
  • 10-12 Curry leaves
  • 2-3 Dried red chillies broken
  • 7-8 Cashewnuts halved
  • 1 Medium carrot finely chopped
  • 1/2 teaspoon Red chilli powder
  • 1/2 cup Green peas
  • to taste Salt
  • 1 tablespo to garnish Fresh coriander leaves chopped

Method

  1. Heat ghee in a deep non-stick pan, add mustard seeds and cumin seeds and let the seeds splutter.
  2. Add curry leaves and red chillies, mix and sauté for a minute. Add cashewnuts and carrot, mix and sauté for 2 minutes.
  3. Add ½ cup coconut and mix. Add red chilli powder and mix. Add rice and 3 cups water and mix.
  4. Add green peas, salt and coconut milk, mix, cover and cook till fully done.
  5. Add coriander leaves and gently mix well.
  6. Transfer into a serving bowl, garnish with coriander leaves and serve hot.
