Ingredients list for Coconut Rice
- 3/4 cup Fresh coconut scraped
- 1/2 cup Coconut milk
- 1 1/2 cups Basmati rice soaked for 20 minutes and drained
- 3 tablespoons Ghee
- 1 teaspoon Mustard seeds
- 1/2 teaspoon Cumin seeds
- 10-12 Curry leaves
- 2-3 Dried red chillies broken
- 7-8 Cashewnuts halved
- 1 Medium carrot finely chopped
- 1/2 teaspoon Red chilli powder
- 1/2 cup Green peas
- to taste Salt
- 1 tablespo to garnish Fresh coriander leaves chopped
Method
- Heat ghee in a deep non-stick pan, add mustard seeds and cumin seeds and let the seeds splutter.
- Add curry leaves and red chillies, mix and sauté for a minute. Add cashewnuts and carrot, mix and sauté for 2 minutes.
- Add ½ cup coconut and mix. Add red chilli powder and mix. Add rice and 3 cups water and mix.
- Add green peas, salt and coconut milk, mix, cover and cook till fully done.
- Add coriander leaves and gently mix well.
- Transfer into a serving bowl, garnish with coriander leaves and serve hot.
