Ingredients

  • 250 grams flat rice noodles
  • 15-18 shrimps, shelled and deveined
  • 1 tablespoon oil
  • 2-3 spring onions with greens
  • 2 teaspoons shrimp paste
  • 1 tablespoon red chilli paste
  • 1 tablespoon finely chopped garlicĀ 
  • 2 teaspoons dark soy sauce
  • 1 tablespoon coconut sugar
  • Salt to taste
  • 1 egg
  • 2 tablespoons bean sprouts
  • 1 teaspoon lemon juice
  • Spring onion flower for garnishing

Method

  1. Pour 3 cups of hot water in a bowl and soak rice noodles in it till soft. Drain thoroughly and spread on a plate to cool.
  2. Heat oil in a non-stick pan.
  3. Slice spring onion bulbs with greens
  4. Add shrimp paste and red chilli paste to the pan and mix well. Add the spring onion bulbs and garlic and mix well.
  5. Slice chicken sausages and add and mix. Cook for 5-7 minutes.
  6. Add shrimps and mix well. Add dark soy sauce and coconut sugar and mix well. Add softened noodles and salt and mix well.
  7. Make a well in the centre of the mixture, break egg and put into the well, cover with the noodles and cook till the egg is done. Add bean sprouts and spring onion greens and mix well. Add lemon juice and mix well.
  8. Transfer onto a serving plate, garnish with spring onion flower and serve hot.
