Ingredients
- 10-12 large prawns, heads removed, shells intact and deveined
Marinade - 3 tablespoons barbeque sauce
 - Salt to taste
 - 1½ tablespoons dried red chilli flakes + for sprinkling
 - 2 tablespoons chopped coriander leaves
 - 1½ lemons
 - 1 teaspoon oil
 - 1 tablespoon orange juice concentrate
 - 2 oranges
Dressing - ¼ cup orange juice
 - 1 tablespoon barbeque sauce
 - Salad to serve
 - Micro greens for garnish

Method
- To make the marinade, take barbeque sauce, salt, red chilli flakes and coriander leaves in a bowl. Squeeze the juice of lemons directly into the bowl and mix well. Add oil and mix well.
 - Add prawns to this marinade and mix well. Add orange juice concentrate and mix well.
 - Grate the zest of ½ orange into the prawn mixture and mix well. Set aside for 10-15 minutes.
 - Thickly slice the remaining oranges and set aside.
 - Light sufficient coal in a barbeque, place the orange slices on it and place some marinated prawns on top of each orange slice. You can also place a few prawns directly on the barbeque grill.
 - Drizzle the remaining marinade over the prawns, cover and cook for 2-3 minutes.
 - Meanwhile, for the dressing, take orange juice and barbeque sauce in a bowl and mix well.
 - Drizzle this over the salad and mix well.
 - Take the prawns off the heat. Arrange them on a serving plate, garnish with chilli flakes and micro greens. Serve hot with prepared salad.
