History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Chana Dal Subzi Recipe

  • Bengal Gram soaked overnight 100 grams

  • Green Peas finely chopped 1 medium

  • Capsicum finely chopped 1 medium

  • Green peas 1/4 cup

  • Cauliflower finely chopped 1/4 medium

  • Oil 2 tablespoons

  • Green chillies finely chopped 2

  • Onion finely chopped 1 medium

  • Turmeric powder 1/2 teaspoon

  • Ginger-garlic paste 1 teaspoon

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Garam masala powder 1 teaspoon

  • Tomatoes chopped 2 medium

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Drain and pressure cook Bengal gram with carrot, capsicum, green peas and cauliflower till the pressure is released twice.

Step 2

Heat oil in a non stick pan.. Add green chillies, onions and sauté till onions are translucent.

Step 3

Add turmeric powder, ginger-garlic paste, salt, red chilli powder, garam masala powder and sauté for two minutes.

Step 4

Add tomatoes and cook for four to five minutes.

Step 5

Add cooked dal. Adjust seasonings and cook for four to five minutes.

Step 6

Serve hot garnished with coriander leaves.
