Broken Wheat Bean Sprouts Pulao

Ingredients 

  • 1 1/2 cup broken wheat (dalia/lapsi), soaked
  • 1 cup bean sprouts
  • 2 tablespoons oil
  • 2 bay leaves
  • 2 inch cinnamon stick 
  • 4 cloves
  • 10-12 black peppercorns
  • 1 teaspoon cumin seeds
  • 2 medium onions, thinly sliced
  • 1 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 1/2 cup shelled green peas
  • 8-10 fresh mint leaves
  • 2 tablespoons ghee
  • 1 tablespoon chopped fresh coriander leaves 

Method

  1. Heat oil in a non stick kadai, add bay leaves, cinnamon, cloves, black peppercorns and cumin seeds and sauté till fragrant. Add onions and sauté till translucent.
  2. Drain and add dalia, with red chilli powder, turmeric powder and salt and mix well. Add green peas, mint leaves and mix well.
  3. Add 3 cups boiling water, cover and cook till dalia is cooked well.
  4. Add bean sprouts and ghee and mix well. Transfer into a serving bowl, garnish with coriander leaves and serve hot.
