Ingredients list for Anjeer Gobhi

  • 1 medium Cauliflower separated into small florets
  • 2 tablespoons Dried Figs
  • 1 teaspoon Cumin seeds
  • 2 teaspoon Garlic chopped
  • 2 teaspoons Ginger chopped
  • 2 Green chillies chopped
  • 2 Onions chopped
  • to taste Salt
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Chaat masala
  • 1 teaspoon Red chilli powder
  • 2 tablespoons Fresh coriander leaves chopped
  • 8 Dried figs soaked
  • 1 cup Yogurt
  • 1 teaspoon Garam masala powder
  • to taste Salt

Method

  1. Grind together figs, yogurt, garam masala powder and salt to a fine paste. Heat oil in a non-stick pan, add cumin seeds and when they begin to change colour, add garlic, ginger, green chillies and onions and sauté till onions are golden.
  2. Add salt, turmeric powder, chaat masala, red chilli powder, mix well and sauté for a minute. Add cauliflower and mix. Cook till the cauliflower is partially done. Add anjeer paste, mix well and add a little water. Mix again and cook till thick. Garnish with coriander leaves and serve hot.
