Ingredients
- 3 medium potatoes, boiled and peeled
- 1 1/2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 tablespoon chopped garlic
- 1 1/2 teaspoons chopped ginger
- 1-2 green chillies, chopped
- 3-4 Spring onions with greens, chopped
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- 1 1/2 teaspoons kitchen king masala
- 2 tablespoons chopped fresh coriander leaves
- Salt to taste
- 1/2 teaspoon dried mango powder
- Chopped spring onion greens for garnish
Method
- Heat oil in a non-stick pan, add cumin seeds and allow them to change colour.
- Add garlic, ginger, green chillies and spring onions, mix well and sauté for 1-2 minutes.
- Add turmeric powder, red chilli powder and Kitchen King Masala, mix well and sauté for 1-2 minutes.
- Grate the potatoes and add to the pan. Add ½ cup water and mix well. Cook for 1 minute.
- Add coriander leaves, salt and dried mango powder, mix well and cook for 1 minute. Take it off the heat.
- Transfer into a serving bowl, garnish with spring onion greens and serve hot.
