Ingredients list for Tomato Saar
- 5-6 large Tomatoes chopped
- 1 cup Coconut
- 6 cloves Garlic
- 1 teaspoon Cumin seeds
- to taste Salt
- 1/2 teaspoon Red chilli powder
- 2 tablespoons Olive oil
- 1 teaspoon Mustard seeds
- a pinch Asafoetida
- 8-10 Curry leaves
- 3-4 Green chilli slit
- 2-3 tablespoons Sugar
- 1/4 cup Fresh coriander leaves chopped
Method
- Grind together coconut, garlic and cumin seeds to a paste.
- Place tomatoes in a pan with salt and red chilli powder. Add three cups of water and bring it to a boil. Simmer for fifteen minutes and puree when it is a little cool.
- Heat olive oil in a pan and add mustard seeds, asafoetida and curry leaves. Add pureed tomatoes and green chillies and bring to a boil. Add sugar. Add coconut-garlic paste and mix well. Simmer on low heat for ten minutes.
- Adjust seasoning.
- Serve hot, garnished with coriander leaves.
