Spicy Lobia

Ingredients 

  • 1 cup black eyed peas (lobia), soaked for 4-6 hours
  • 1/4 teaspoon turmeric powder
  • Salt to taste
  • 2 teaspoons coriander seeds
  • 1 teaspoon cumin seeds
  • 5-6 dried red chillies
  • 1/2 cup scraped fresh coconut  + for garnish 
  • 1 tablespoon oil
  • 1 medium onion, roughly chopped
  • 3 green chillies
  • 2 teaspoons finely chopped garlic 
  • 1 teaspoon sugar
  • 1 teaspoon tamarind paste

Method

  1. Heat sufficient water in a deep non-stick pan. Add black eyed peas, salt and turmeric powder, mix well and boil.
  2. Dry roast coriander seeds and cumin seeds till fragrant. Remove from heat and cool.
  3. Grind these roasted spices with red chillies, coconut and sufficient water into a smooth paste.
  4. Heat oil in a non-stick pan. Add onion and saute well.
  5. Slit green chillies lengthwise and add to the pan. Add garlic and saute for 2 minutes.
  6. Add ground paste, mix well and sauté for 2 minutes. Add boiled black eyed peas along with the stock and mix well.
  7. Add sugar and tamarind paste and mix well. Simmer for 3-4 minutes.
  8. Garnish with a little scraped fresh coconut and serve hot.
