Ingredients for Pav Bhaji Au Gratin -SK Khazana Recipe

  • Toasted Pav Slices as required

  • Pav bhaji masala 2 tablespoons

  • Potatoes medium, boiled, peeled and mashed 3

  • Mozzarella cheese grated 1/4 cup

  • Processed cheese grated 1/4 cup

  • Oil 2 tablespoons

  • Butter 4 tablespoons

  • Onion large, finely chopped 1

  • Ginger-garlic paste 1 tablespoon

  • Tomatoes medium, finely chopped 2

  • Green chillies chopped 1-2

  • Tomato puree 1/2 cup

  • Red chilli paste 2 tablespoons

  • Cauliflower grated 1/2 cup

  • Green peas blanched 1/2 cup

  • Capsicum small, finely chopped 1

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

  • Fresh coriander sprig for garnish

  • Lemon wedges to serve

Method

Step 1

Preheat the oven at 180˚C.

Step 2

Heat oil and 2 tbsps butter in a non-stick pan, add onion and sauté till golden brown. Add ginger-garlic paste and mix well. Cook for a minute.

Step 3

Add tomatoes and green chillies and mix well. Cook till pulpy. Add tomato puree, mix and cook till the oil separates.

Step 4

Add red chilli paste, cauliflower, green peas, and mix well. Add potatoes, capsicum, salt and pav bhaji Masala and mix well. Mash the mixture using a masher and cook for 1-2 minutes.

Step 5

Add 1 cup water and mix well and cook for 1-2 minutes. Add remaining butter and mix, add coriander leaves and mix well. Take the pan off the heat.

Step 6

Transfer the mixture into a small oven proof pan, sprinkle mozzarella cheese and processed cheese on top. Bake for 10-15 minutes.

Step 7

Garnish with coriander sprig and serve hot with toasted pav slices and lemon wedges.
