Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Mushroom, Babycorn And Paneer Tawa Masala Recipe

  • Button mushrooms sliced 6

  • Babycorns

  • Babycorns halved and boiled 8-10

  • Paneer (cottage cheese) cut into 1½ inch cubes 150 grams

  • Baby potatoes parboiled 10

  • Pearl onions 10-15

  • Oil 3 tablespoons

  • Onions chopped 2 large

  • Ginger chopped 1 1/2 inch piece

  • Green chillies chopped 3-4

  • Coriander powder 1/2 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Garam masala powder 4 teaspoons

  • Salt to taste

  • Tomato puree 8 tablespoons

  • Lemon juice 1 tablespoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Sauté mushrooms, baby corns, paneer, baby potatoes and pearl onions separately in one teaspoon of oil each, sprinkling a little salt as you sauté.

Step 2

Drain and set aside.

Step 3

Heat three tablespoons of oil on a tawa; add onions and sauté till brown. Add ginger and continue to sauté. Add a little water and cook for a few minutes.

Step 4

Place the sautéed paneer and vegetables around the edge of the tawa. Add green chillies to the onion mixture and continue to sauté.

Step 5

Draw the vegetables and paneer into the masala at the centre of the tawa. Add coriander powder, red chilli powder, garam masala powder, salt, tomato purée and half a cup of water and mix well. Cook for three to four minutes , add lemon juice and mix.

Step 6

Garnish with coriander leaves and serve hot.
