Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Mexican Cheese Pani Puri Recipe

  • Processed cheese , cut into small cubes 150 grams

  • Processed cheese , grated 1 1/2 cups to sprinkle

  • Crisp puris 24

  • Oil 4 tablespoons

  • Onions , finely chopped 2 medium

  • Green capsicum , chopped 1 medium

  • Tomatoes , chopped 2 medium

  • Corn kernels , boiled 1 cup

  • Green peas , blanched 1 cup

  • Salt to taste

  • Tomato ketchup 3/4 cup

  • Red chilli sauce 3 tablespoons

  • Dried mixed herbs 1 tbsp + 2 to sprinkle

  • Red chilli flakes 1 tbsp + 2 to sprinkle

  • Milk 2 cups

  • Turmeric powder 1/4 teaspoon

  • Chaat masala to sprinkle

  • Micro greens for garnish

Method

Step 1

To make the filling, heat oil in a non-stick pan, add onions, capsicum, tomatoes, corn kernels, green peas, salt, tomato ketchup, red chilli sauce, 1 tbsp mixed herbs and 1 tbsp red chilli flakes and sauté on medium heat for 2-3 minutes. Transfer the filling into a bowl. Add processed cheese cubes and mix well and set aside to cool down.

Step 2

To prepare cheese sauce, heat milk in a non-stick pan. Add grated processed cheese and turmeric powder and mix well. Cook on medium heat, stirring continuously, for 2-3 minutes or till the mixture boils and thickens. Transfer into another bowl.

Step 3

Add remaining mixed herbs and remaining red chilli flakes to the cheese sauce and mix well. Set aside to cool down.

Step 4

Arrange small serving glasses on a platter. Pour cheese sauce in each glass.

Step 5

Make a dent in the centre of each puri. Stuff each puri with the filling and place one on the rim of each serving glass.

Step 6

Sprinkle mixed herbs, red chilli flakes and chaat masala on them. Garnish each puri with micro greens and sprinkle grated processed cheese on top. Serve immediately.
