Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Healthy Samosa - SK Khazana Recipe

  • Dough

  • Refined flour 1 1/2 cups

  • Carom seeds (ajwain) 1/2 teaspoon

  • Salt to taste

  • Ghee 1 teaspoon to grease

  • Stuffing

  • Medium potatoes boiled, peeled and mashed 2

  • Medium sweet potato boiled, peeled and mashed 1

  • Ghee 1 teaspoon

  • Cumin seeds 1/2 teaspoon

  • Green chillies finely chopped 2

  • Ginger finely chopped 1 inches

  • Green peas boiled 1/2 cup

  • Red chilli powder 1 teaspoon

  • Dried mango powder (amchur) 1/2 teaspoon

  • Garam masala powder 1/2 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

  • Green chutney to serve


Step 1

Heat ghee in a non-stick pan and add cumin seeds. Once cumin seeds start to change colour, add green chillies and ginger and sauté till the raw flavour of ginger goes away.

Step 2

Add green peas, red chilli powder, dried mango powder and garam masala and mix well. Add salt and ¼ cup water and mash the green peas.

Step 3

Add potatoes and sweet potato and mix well. Add coriander leaves and mix well. Take the pan off the heat, transfer the mixture into a bowl and set aside to cool.

Step 4

To make dough, take refined flour in a mixing bowl, add carom seeds, salt, and 1 tbsp ghee. Add sufficient water and knead into stiff dough. Cover with damp muslin cloth and set aside for 15 minutes.

Step 5

Preheat air-fryer to 180˚C.

Step 6

Apply ghee on the worktop and roll out into thin oblong sheets. Halve each sheet. Shape each halved sheet into a cone and stuff with some potato mixture. Apply water on edges, bring them together and press to seal and shape into samosas.

Step 7

Grease air-fryer basket with ghee, place the samosas in it, attach it to the air-fryer, brush the samosas with some ghee and bake for 15-20 minutes.

Step 8

Arrange the samosas on a serving plate and serve hot with green chutney.
