Chicken Stuffed Tomatoes Scooped out tomatoes stuffed with spicy chicken mince and cooked in a onion based gravy. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 06 Jul 2016 in Recipes Course New Update Main Ingredients Chicken mince, Tomatoes Cuisine Indian, , , , Course Main Course Chicken Prep Time 11-15 minutes Cook time 31-40 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Chicken Stuffed Tomatoes 1 cup Chicken mince 4 large Tomatoes 2 teaspoons Red chilli powder to taste Salt 1 Green chilli 1 tablespoon Butter 7-8 Black peppercorns 3-4 Cloves 1 inch Cinnamon 2 Green cardamoms 1 Bay leaf 2 medium Onions finely chopped 2 teaspoons Ginger-garlic paste 1 tablespoon Cashewnut paste ¼ cup Fresh cream for garnishing Fresh coriander leaves chopped Method Combine chicken mince, 1 teaspoon red chilli powder, salt and finely chopped green chilli in a bowl and mix well. Cut top and bottom parts of the tomatoes. Scoop out the pulp using a spoon to make tomato cups. Finely chop the pulp. Heat butter in a non-stick pan. Add peppercorns, cloves, cinnamon, cardamoms and bay leaf and sauté till the butter turns brown. Add onions, mix and sauté for 2 minutes. Add chopped tomato pulp, mix and sauté for 2-3 minutes. Add ginger-garlic paste, mix well and sauté for 2-3 minutes. Add remaining red chilli powder, mix well and sauté for 2-3 minutes. Stuff the tomato cups with the chicken mince mixture. Add ½ cup water to the pan and stir to mix. Place the stuffed tomatoes in it, cover and cook on low heat for 10-15 minutes or till the chicken is fully cooked. Remove stuffed tomatoes and place in a serving bowl. Discard cinnamon and bay leaf from the pan and add cashewnut paste. Mix well. Add ½ cup water and stir to mix. Add salt, mix well and cook for 2-3 minutes. Lower heat, add cream and mix well. Switch off heat.
