Chicken Cuppa Noodles

Ingredients

  • 200 grams boneless chicken, cut into small pieces
  • 200 grams instant noodles
  • 1 tablespoon oil
  • 1 tablespoon chopped garlic 
  • 1 red chilli, chopped
  • 1 medium onion, sliced
  • Salt to taste
  • 6-8 button mushrooms, sliced
  • 3-4 tablespoons corn kernels
  • 1½ cups chicken stock
  • 1 teaspoon light soy sauce
  • 2 tablespoons chopped spring onion greens  + for garnish

Method

  1. Heat oil in a deep non-stick pan. Add garlic and sauté for 30 seconds. Add red chili and onion and sauté till onion turns translucent.
  2. Add chicken, mix and cook for 1-2 minutes. Add salt and mix. Add mushrooms and corn kernels, mix and cook for 1 minute.
  3. Break noodles and add along with chicken stock and light soy sauce, mix and cook till noodles are done.
  4. Add spring onion greens and mix.
  5. Serve hot garnished with some spring onion greens.
