Ingredients list for Bhugha Chawar

  • 1½ cups Rice soaked
  • Simple Indian masalas
  • 2 tablespoons Ghee
  • 6-8 Cloves
  • 4-5 Green cardamoms
  • 1 teaspoon Cumin seeds
  • ½ inch stick Cinnamon
  • 2 Bay leaves
  • 2 medium Onions chopped
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Red chilli powder
  • 1 medium Tomato chopped
  • to taste Salt
  • for garnish Fresh coriander sprigs

Method

  1. Heat ghee in a non-stick pan, add cloves, green cardamom, cumin seeds, cinnamon and bay leaves and sauté for a few seconds.
  2. Add onions and sauté till golden brown. Add turmeric powder and red chilli powder and mix well.
  3. Add tomato, mix well and cook for two to three minutes.
  4. Drain and add soaked rice, mix well. Add three cups water and salt, cover and cook for five to ten minutes or till the rice is done.
  5. Transfer into a serving bowl and serve hot garnished with coriander sprigs.
