Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Batata Matki Ussal Recipe

  • Potatoes quartered vertically and sliced 2 medium

  • Sprouted matki beans 1½ cups (200 grams)

  • Oil 2 tablespoons

  • Onion 1 medium

  • Asafoetida 1/4 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Cumin seeds 1/2 teaspoons

  • Curry leaves 8-10

  • Turmeric powder 1/4 teaspoon

  • Salt red to taste

  • Red chilli powder 1 teaspoon

  • Goda masala powder 1 /1 2 teaspoon

  • Sugar 1 1/2 teaspoons

  • Fresh coriander leaves a few sprigs

  • Scraped coconut a few

Method

Step 1

Heat oil in a non-stick pan. Chop onion.

Step 2

Deds, curry leaves and onion to the pan and sauté.

Step 3

Add potatoes and mix. Add turmeric powder and mix well. Add salt and mix well. Add matki and 1 cup water and mix.

Step 4

Add red chilli powder and goda masala and mix. Add sugar and mix well. Cover and cook till both potatoes and matki are done.

Step 5

Chop a few sprigs of fresh coriander leaves.

Step 6

Transfer the ussal into a serving plate. Garnish with coconut and coriander leaves and serve hot.
