Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Anda Bhurji Recipe

  • Eggs 6

  • Butter 1 tablespoons

  • Oil 1/2 tablespoon

  • Cumin seeds 1 teaspoon

  • Onion finely chopped 1 medium

  • Green chillies chopped 1-2

  • Tomato finely chopped 1 medium

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1 teaspoon

  • Coriander powder 1 teaspoon

  • Cumin seeds 1/4 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

Method

Step 1

Heat butter and oil in a non-stick pan. Add cumin seeds and sauté till fragrant. Add onion and green chillies and sauté till onion turns brown.

Step 2

Break eggs in a bowl and whisk well.

Step 3

Add tomatoes and salt to the pan, mix well and cook on medium heat till tomatoes turn soft and pulpy.

Step 4

Add turmeric powder, chilli powder, coriander powder and cumin powder and mix well. Add chopped coriander and mix well. Add eggs, mix and cook on medium heat for 2-3 minutes.

Step 5

Serve hot garnished with a coriander sprig.
