Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Ambat Batata Recipe

  • Potatoes boiled, peeled and cubed 5-6 medium

  • Kokum petals

  • Oil 3 tablespoons

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Curry leaves 10-15

  • Onions chopped 2 medium

  • Green chillies chopped 2

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Yogurt 1/2 cup

  • Kokum petals 4-5

  • Coconut scraped 1/4 cup

  • Lemon juice 2 teaspoons

Method

Step 1

Heat the oil in a non stick pan.

Step 2

Add the cumin seeds and mustard seeds. When they splutter add the curry leaves and onions and sauté for a minute. Add the green chillies and turmeric powder and sauté till the onions are lightly coloured.

Step 3

Add the potatoes, salt, yogurt and kokum and mix. Cook for two to three minutes. Add the coconut and lemon juice and toss well.

Step 4

Serve hot.
