Ingredients
- 2 medium potatoes, cut into wedges
- 1 small cauliflower, cut into florets
- 1 cup finely chopped fresh fenugreek (methi)
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- ½ teaspoon asafoetida
- 1 inch ginger, cut into strips
- 2 green chillies, slit
- ½ teaspoon red chilli powder
- 1 teaspoon coriander powder
- 1 teaspoon chaat masala
- Salt to taste
Method
- Heat one tablespoon oil in a non-stick pan; add cumin seeds and asafoetida. When the seeds begin to change colour, add ginger, green chilli and sauté for one minute. Add potatoes. Cover and cook for 3 minutes
- Add cauliflower florets, sprinkle around two tablespoons of water and cook for 5 minutes.
- Add red chilli powder, coriander powder, chaat masala, salt and methi. Mix well.
