Ingredients
- 1 cup rice flour
- 1 teaspoon + 1 tablespoon ghee
- A pinch of salt
- ⅓ cup chopped jaggery
- 1 cup scraped fresh coconut
- ½ teaspoon green cardamom powder
- A pinch of nutmeg powder
- 1 tablespoon chopped cashewnuts
- 1 tablespoon chopped almonds
- 1 tablespoon chopped pistachios
Method
- Heat 1 cup water in a deep pan, add 1 teaspoon ghee and salt, mix well and bring it to a boil.
- Add rice flour and stir continuously till well combined. Sprinkle a little water, cover and cook on low heat for 1-2 minutes.
- Switch the heat off and transfer the mixture into a parat. Knead with a small stainless steel bowl while the dough is hot.
- Once the dough is warm, use your hand to knead the dough till it is smooth. Divide the dough into small equal portions and shape each portion into a ball.
- Heat 1 tablespoon ghee in a pan, add the dough balls and sauté on low heat for 2-3 minutes. Transfer the mixture on a plate.
- Add jaggery into the same pan and cook till it melts. Add coconut and mix well and cook for 1-2 minutes.
- Add green cardamom powder, nutmeg powder, cashewnuts, almonds and pistachios and mix well. Add the sauteed dough balls and mix well.
- Transfer into a serving bowl and serve warm.
