Turkish Kebab

Chicken cubes marinated in a unique Turkish marinade and grilled to a wonderfully and lightly charred perfection. An excellent starter. This is Sanjeev Kapoor exclusive recipe.

Ingredients

  • 300 grams boneless chicken leg, cut into ½ inch cubes
  • 2 tablespoons olive oil 
  • 1½ tablespoons finely chopped garlic
  • 2 teaspoons red chilli flakes
  • ¼ teaspoon turmeric powder
  • ½ teaspoon dried thyme 
  • Crushed black peppercorns to taste
  • Salt to taste
  • ½ teaspoon cumin powder
  • 1 teaspoon paprika powder
  • ½ cup grated onion
  • ½ cup thick yogurt
  • 2 teaspoons lemon juice
  • 2 small tomatoes
  • 2 small white onions
  • 2 green jalapenos
  • Butter for grilling
  • Khabus to serve

Method

  1. To make the marinade, take olive oil in a large bowl, add garlic, red chilli flakes, turmeric powder, dried thyme, crushed black peppercorns, salt, cumin powder, paprika powder and squeeze the juice of grated onion directly into it. Add yogurt and lemon juice and whisk well. Add chicken cubes and mix till each cube is well coated with the marinade. Set aside to marinate for 2-3 hours.
  2. Halve tomatoes. Halve white onions horizontally. Diagonally halve green jalapenos.
  3. Thread green jalapenos, onions and tomatoes onto skewers. 
  4. Thread 8-10 chicken cubes on to each skewer.  
  5. Heat a non-stick grill pan, brush with some butter and place the chicken skewers along with vegetable skewers on it and grill for 2-3 minutes. Baste with butter and grill for 1-2 minutes.
  6. Keep some khabus on a serving tray, remove the chicken cubes and vegetables from the skewers over them and serve hot.
