Ingredients
- 300 grams purple yam (kand)
- Salt to taste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon black pepper powder + a pinch
- 2-3 tablespoons cornflour
- Oil for cooking
- ½ cup cream cheese
- ¼ teaspoon paprika powder
- 1 teaspoon chopped chives + to sprinkle
- 1 tablespoon fresh cream
Method
- Peel the purple yam and grate thickly into a bowl.
- Add salt, onion powder, garlic powder, black pepper powder and cornflour and mix well.
- Heat a non-stick tawa. Place a greased cookie cutter and put a portion of purple yam mixture in it and press well to make a round patty. Similarly make a few more patties.
- Drizzle some oil around each patty and cook on low heat for 6-8 minutes or till the underside is golden brown and crisp.
- Flip and cook the other side for 4-5 minutes on low heat or till crisp. Drain on absorbent paper.
- For the dip, take cream cheese in a bowl, add a pinch of salt and a pinch of black pepper powder and mix well.
- Add paprika powder, chives and fresh cream and mix well.
- Arrange the kand patties on a serving plate and serve hot with the dip.
