Rotli Nu Shak

A Gujarati dish that is so delicious and an excellent way to serve leftover rotis. You are sure to enjoy it so much so you will probably make extra rotis so that you can make this with the leftovers the next day.

Ingredients

  • 4-5 leftover rotis 
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 3-4 green chillies, chopped
  • 1½ tablespoons finely chopped garlic
  • 2 medium onions, chopped
  • Salt to taste
  • 1½ teaspoons red chilli powder
  • 1 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 2 cups buttermilk
  • 1 teaspoon sugar
  • 2 tablespoons chopped fresh coriander leaves
  • Fresh coriander sprig for garnish

Method

  1. Break the rotis into small pieces and put into a large bowl. 
  2. Heat oil in a non-stick pan, add mustard seeds and let them splutter. Add green chillies and garlic, mix well and saute till golden brown.
  3. Add onions, mix well and saute till translucent. Add salt, mix well and saute for 1-2 minutes. 
  4. Add red chilli powder and coriander powder, mix well and saute for 1 minute. Add cumin powder, mix and sauté for 30 seconds.
  5. Add the roti pieces and mix well. Add buttermilk and sugar, mix and cook till the mixture comes to a boil. Cover and cook for 3-4 minutes.
  6. Add coriander leaves and mix. 
  7. Transfer into a serving bowl and serve hot garnished with coriander sprig.
