Ingredients
- 20-25 medium prawns, cleaned and deveined
- 10-12 garlic cloves
- Salt to taste
- 10-12 fresh parsley sprigs
- 2-3 fresh thyme sprigs
- 1-2 fresh oregano sprigs
- ½ lemon
- 1 teaspoon red chilli flakes
- Crushed black peppercorns to taste
- 2 tablespoons olive oil + for brushing
- 2 tablespoons orange juice
- Butter for basting
- Salad to serve
Method
- Coarsely pound the garlic cloves and salt in a mortar with a pestle.
- Tear parsley sprigs and add to the garlic mixture. Pluck the thyme leaves and pluck the oregano sprigs and add to the same mixture. Squeeze the juice of lemon and add red chilli flakes along with salt, crushed black peppercorns and continue to pound to a coarse mixture.
- Add olive oil and mix well.
- Take prawns in a large bowl. Add salt, orange juice and mix well. Add the pounded mixture and mix till each prawn is well coated with the mixture. Set aside to marinate for 15-20 minutes.
- Skewer the prawns on to metal skewers.
- Brush some olive oil on an electric barbeque. Place the skewers on it and cook on high heat for 2-3 minutes on each side. Brush with butter in between.
- Arrange the skewers on a serving plate. Serve hot with salad.
