Ingredients
- 4-5 medium fresh peaches
- ½ cup icing sugar
- 1 lemon
- 1½ tablespoons lemon juice
- ¾ cup milk
- 1 teaspoon white vinegar
- 1 cup refined flour (maida)
- 2 tablespoons corn flour
- 1 teaspoon baking powder
- 2 tablespoons castor sugar
- A pinch of salt
- 2 tablespoons roughly chopped walnuts
- ½ teaspoon vanilla essence
- 2 tablespoons melted butter
- Oil for shallow frying
- Fresh mint leaves for garnish
Method
- To make lemon glaze, take icing sugar in a bowl, zest lemon directly into the bowl, add lemon juice and mix well.
- Take milk in a small jug, add vinegar, mix and set aside for 10 minutes.
- Peel, seed and roughly chop peaches.
- Sift refined flour, corn flour, baking powder, castor sugar and salt in a bowl. Add milk-vinegar mixture and mix well.
- Add peaches, walnuts and vanilla essence and mix well. Add melted butter and mix well.
- Heat sufficient oil in a shallow non-stick frying pan. Drop small portions of the peach mixture and spread lightly. Shallow fry, turning sides, till crisp. Drain on absorbent paper.
- Arrange the fritters on a serving plate, drizzle the lemon glaze, garnish with mint leaves and serve warm.
