Method

  1. Wash proso millet and soak it with sufficient water for 2-3 hours. Drain and transfer into a deep pan. Add 2¼ cups water, mix and cover and cook till the mixture comes to a boil. Discard the scum, reduce the heat to low, cover again and cook for 8-10 minutes. Switch the heat off.
  2. Transfer 1 cup cooked proso millet into a large bowl, add cottage cheese, green peas, salt, red chilli powder, turmeric powder, garam masala powder, white sesame seeds, green chilli and coriander leaves and mix till well combined. 
  3. Divide the mixture into equal portions, shape each portion into a ball and flatten it slightly to shape it like a tikki.
  4. Heat oil in a non-stick pan. Place a few tikkis at a time on it and shallow-fry, turning sides, till both sides are evenly golden brown and crisp. Drain on absorbent paper.
  5. Arrange the tikkis on a serving plate and serve hot with green chutney, salad, lemon wedge and mint sprigs.
