Ingredients
- ½ cup grated cottage cheese (paneer)
- 1 cup proso millet
- ½ cup boiled and mashed green peas
- Salt to taste
- ½ teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- ½ teaspoon garam masala powder
- 1 teaspoon white sesame seeds
- 1 green chilli, chopped
- 2 tablespoons chopped fresh coriander leaves
- 1-2 tablespoons oil
Method
- Wash proso millet and soak it with sufficient water for 2-3 hours. Drain and transfer into a deep pan. Add 2¼ cups water, mix and cover and cook till the mixture comes to a boil. Discard the scum, reduce the heat to low, cover again and cook for 8-10 minutes. Switch the heat off.
- Transfer 1 cup cooked proso millet into a large bowl, add cottage cheese, green peas, salt, red chilli powder, turmeric powder, garam masala powder, white sesame seeds, green chilli and coriander leaves and mix till well combined.
- Divide the mixture into equal portions, shape each portion into a ball and flatten it slightly to shape it like a tikki.
- Heat oil in a non-stick pan. Place a few tikkis at a time on it and shallow-fry, turning sides, till both sides are evenly golden brown and crisp. Drain on absorbent paper.
- Arrange the tikkis on a serving plate and serve hot with green chutney, salad, lemon wedge and mint sprigs.
