Mushroom Herbed Rice

This rice is super flavourful with the different mushrooms lending their individual flavour. Fresh thyme further enhances the flavour. Super easy and quick to make, it tastes absolutely amazing! You can either have it on its own or pair it with a gravy, or sauces of your choice!

Ingredients

  • 3-4 fresh shitake mushrooms, sliced
  • 5-6 button mushrooms, sliced
  • 6-8 fresh oyster mushrooms, sliced    
  • 15-20 enoki mushrooms, cut into 1 inch pieces
  • 1-2 fresh thyme sprigs
  • 3 cups cooked rice
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 8-10 garlic cloves, crushed
  • Salt to taste
  • Crushed black peppercorns to taste
  • 2 tablespoons chopped fresh parsley + a sprig for garnishing

Method

  1. Heat oil and butter in a non-stick pan, add garlic and sauté till golden brown. Add thyme, mix and saute for 1 minute.
  2. Add shitake mushrooms, button mushrooms, oyster mushrooms and enoki mushrooms, mix and sauté on high heat till the mushrooms turn golden brown. 
  3. Add rice, salt, crushed black peppercorns and parsley and mix gently till well combined. Cook for 1-2 minutes.
  4. Transfer the rice into a serving bowl. Garnish with parsley sprig and serve hot.
