Ingredients
- 3 cups fresh fenugreek leaves (methi), finely chopped
- 3-4 ripe bananas, cut into thick roundels with the skin on
- 2-3 tablespoons oil
- 1 teaspoon mustard seeds
- Salt to taste
- ½ tablespoon ginger-green chilli paste
- ½ teaspoon turmeric powder
- 2 teaspoons coriander powder
- 2 teaspoons cumin powder
- Chapattis or rotis to serve
Method
- Heat oil in a kadai, add mustard seeds and when they start to splutter, add fenugreek leaves and salt, mix well and cook for 6-8 minutes.
- Add ginger-green chilli paste, mix and cook for 1 minute. Add turmeric powder, coriander powder and cumin powder, mix well and cook for 1-2 minutes.
- Add banana roundels, mix and cook covered on low heat for 2 minutes.
- Serve hot with chappatis/rotis.
