Ingredients
- 1½ cups maize flour (makai ka atta)
- ½ cup chopped jaggery
- 4 tablespoons ghee
- ½ teaspoon green cardamom powder
- A pinch of salt
- ½ cup white sesame seeds
- Oil for deep frying
Method
- Heat a non-stick pan, add jaggery and 1 cup water, mix well and cook till the jaggery dissolves.
- Heat ghee in a small non-stick pan.
- Take maize flour in a parat, add green cardamom powder, salt, white sesame seeds and hot ghee and mix well with your fingertips till the mixture resembles breadcrumbs.
- Add jaggery mixture and knead to a semi stiff sough. Cover with a damp cloth and rest for 15 minutes.
- Divide the dough into equal marble sized portions and pat into thick discs. Prick all over to avoid puffing. These are mathris.
- Heat sufficient oil in a kadai, slide in the prepared mathris, a few at a time, and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper and allow to cool.
- Arrange on a serving platter and serve or store in an airtight container or serve.
