Ingredients

Method

  1. Heat a non-stick pan, add jaggery and 1 cup water, mix well and cook till the jaggery dissolves.
  2. Heat ghee in a small non-stick pan.
  3. Take maize flour in a parat, add green cardamom powder, salt, white sesame seeds and hot ghee and mix well with your fingertips till the mixture resembles breadcrumbs.
  4. Add jaggery mixture and knead to a semi stiff sough. Cover with a damp cloth and rest for 15 minutes.
  5. Divide the dough into equal marble sized portions and pat into thick discs. Prick all over to avoid puffing. These are mathris.
  6. Heat sufficient oil in a kadai, slide in the prepared mathris, a few at a time, and deep-fry on medium heat till golden brown and crisp. Drain on absorbent paper and allow to cool.
  7. Arrange on a serving platter and serve or store in an airtight container or serve.
