Lauki Ke Pakode

The humble lauki (bottle gourd), cut into thin roundels, coated with a mildly spiced gram flour batter and deep-fried till golden and crisp. Tastes best when served hot with green chutney.

Ingredients 

  • 1 medium bottle gourd (lauki)
  • Oil for deep frying
  • 1 cup gram flour (besan)
  • 2 tablespoons rice flour
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chilli powder
  • Salt to taste
  • ½ teaspoon carom seeds (ajwain)
  • 1 teaspoon ginger-garlic-green chilli paste
  • 1 tablespoon chopped fresh coriander leaves
  • Green chutney to serve

Method

  1. Peel the bottle gourd, cut into thin roundels and dip them in water.
  2. Heat sufficient oil in a kadai.
  3. Take gram flour in mixing bowl, add rice flour, turmeric powder, red chilli powder, salt, crushed carom seeds, ginger-garlic-green chilli paste and coriander leaves and mix. Gradually add ¾ cup water and mix well for 3-4 minutes or till you get a smooth batter. 
  4. Dip the roundels in the batter, gently slide into hot oil and deep fry till golden brown and crisp. Drain on absorbent pepper. 
  5. Arrange on a serving plate and serve hot with green chutney.
