Kharik Laddoo

Talk about health as a dessert …. Dried dates, nuts and sesame make for a crunchy, flavourful dessert. You may also have it as a post-workout snack to give boost of energy!

Ingredients 

Method

  1. Heat a non-stick pan, add white sesame seeds and dry roast for 1 minute. Transfer onto a plate and set aside to cool down.
  2. Dry roast dried coconut in the same pan till golden brown. Transfer onto same plate and set aside to cool down.
  3. Heat 2 tablespoons ghee in another non-stick pan, add almonds and sauté till golden brown. Drain and transfer onto the same plate and set aside to cool down.
  4. Add cashewnuts and pistachios to the same pan and saute till golden brown. Drain transfer onto the plate and set aside to cool down.
  5. Add gum resin to the same pan and sauté till puffed. Drain and transfer onto the plate and set aside to cool down.
  6. Heat remaining ghee in the same pan. Add dried dates powder and sauté for 4-5 minutes on medium heat. Allow to cool.
  7. Transfer sesame seeds, coconut, almonds, cashewnuts, pistachios and gum resin into a grinder jar and grind coarsely. Transfer onto the same plate. Add the sauteed date powder and mix well. 
  8. Heat another non-stick pan, add jaggery and 2 tablespoons water and cook till the syrup reaches soft ball consistency. 
  9. Add this to the ground mixture, add green cardamom powder and mix well when the mixture is still warm. Divide the mixture into equal portions and shape them into laddoos.
  10. Arrange the laddoos on a serving plate and serve.
