Kashmiri Kulcha

Unlike the usual soft kulcha that we eat at restaurant along with some sabzi, this Kashmiri Kulcha topped with sesame seeds is crisp, hard with flaky biscuit like texture and often served at tea-time with Noon chai or pink tea.

Ingredients

Method

  1. Break egg into a bowl, add castor sugar and mix well till sugar dissolves. Add ghee and mix well.
  2. Sift refined flour, cardamom powder, salt, baking powder and yeast together into the egg mixture. Knead to form soft dough. Cover and set aside to prove for 1 hour or till it doubles in volume.
  3. Preheat oven to 220⁰ C.
  4. Divide the dough in 8 equal portions and flatten them slightly. Arrange them on a baking tray, brush egg yolk and sprinkle sesame seeds on top.
  5. Keep the tray in the preheated oven and bake for 10-15 minutes. Allow to cool completely.
  6. Arrange them in a serving basket and serve with tea.
