Ingredients
- 15-20 button mushrooms
- 3 cups penne pasta
- 3 tablespoons olive oil + to drizzle
- Salt to taste
- 2 tablespoons refined flour (maida)
- 10-12 garlic cloves
- 1 medium onion, quartered
- ½ cup readymade cheese sauce
- 4-5 fresh basil leaves
- ½ teaspoon dried oregano
- ¾ cup grated mozzarella cheese
- 2-3 teaspoons red chilli flakes
- 2-3 teaspoons burnt garlic
Method
- Heat a non-stick pan, add pasta, sufficient hot water, 1 tablespoon olive oil and salt and cook for 10-12 minutes.
- Meanwhile take mushrooms in a bowl, add refined flour and rub well. Add to a bowl of water and wash well. Drain and dry them on a kitchen napkin. Further slice them thinly.
- Drain the pasta and reserve the cooking water. Transfer the pasta into a bowl. Drizzle 1 tablespoon olive oil on top and mix well.
- Put garlic cloves and onion into a string chopper jar and chop finely.
- Heat 2 tablespoons olive oil in a non-stick wok, add chopped garlic-onion mixture and sauté for 1 minute.
- Add mushrooms, mix and sauté for 2-3 minutes. Add cheese sauce, torn basil leaves and salt and mix well.
- Add 1 cup pasta water and boiled pasta, mix well and cook for 2-3 minutes.
- Add dried oregano and mix well.
- Transfer into tiffin boxes and sprinkle mozzarella cheese on top.
- Mix red chilli flakes and fried garlic in a small jar and mix well.
- Sprinkle this mixture on pasta and serve.
