Ingredients
- 1 kilogram red carrots, peeled and grated
- 2-3 tablespoons ghee
- 4 pinches of green cardamom powder
- ½ litre milk
- 2 tablespoons almonds
- 2 tablespoons cashewnuts
- 1 cup sugar
- 2 tablespoons grated khoya (mawa)
- Slivered almonds for garnish
Method
- Heat ghee in a wide non-stick pan, add 2 pinches of green cardamom powder and grated carrots, mix well and sauté on medium heat for 4-5 minutes.
- Add milk, mix, cover and cook on medium heat, stirring in between till most of the milk evaporates.
- Meanwhile, put almonds and cashewnuts in a mixer jar and grind coarsely.
- Add sugar to the carrot mixture, mix well and cook till it dissolves completely. Cover and cook, stirring in between, till most of the moisture evaporates.
- Add remaining green cardamom powder and mix well. Add khoya and ground nuts and mix well.
- Transfer the halwa into a serving bowl, garnish with slivered almonds. Serve warm.
