Gajar Ka Halwa

Gajar ka halwa is a popular sweet dish and a winter favourite in India made with freshly grated red and juicy carrots, ghee, milk, sugar, khoya and dried fruits. Popularly served as a dessert during festivals and special occasion.

Ingredients

  • 1 kilogram red carrots, peeled and grated
  • 2-3 tablespoons ghee
  • 4 pinches of green cardamom powder
  • ½ litre milk
  • 2 tablespoons almonds
  • 2 tablespoons cashewnuts
  • 1 cup sugar
  • 2 tablespoons grated khoya (mawa)
  • Slivered almonds for garnish

Method

  1. Heat ghee in a wide non-stick pan, add 2 pinches of green cardamom powder and grated carrots, mix well and sauté on medium heat for 4-5 minutes.
  2. Add milk, mix, cover and cook on medium heat, stirring in between till most of the milk evaporates. 
  3. Meanwhile, put almonds and cashewnuts in a mixer jar and grind coarsely.
  4. Add sugar to the carrot mixture, mix well and cook till it dissolves completely. Cover  and cook, stirring in between, till most of the moisture evaporates. 
  5. Add remaining green cardamom powder and mix well.  Add khoya and ground nuts and mix well. 
  6. Transfer the halwa into a serving bowl, garnish with slivered almonds. Serve warm.
