Chicken Bhutuwa

Ingredients

  • 750 grams boneless chicken leg, cut into 1 inch pieces 
  • 2-3 tablespoons mustard oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala powder
  • ½ teaspoon turmeric powder
  • 2 teaspoons red chilli powder
  • 1½ teaspoons meat masala
  • 1½ tablespoons ginger-garlic paste 
  • 2 medium tomatoes, finely chopped
  • Salt to taste
  • 2 green chillies, diagonally sliced
  • 2 medium onions, thinly sliced
  • 2-3 tablespoons chopped fresh coriander leaves
  • Steamed rice to serve

Method

  1. Heat mustard oil in a non-stick pan. Once it starts to smoke, add cumin seeds. Once they start to change colour, add chicken pieces, mix and sauté on high heat for 3-4 minutes.
  2. Add coriander powder, garam masala powder, turmeric powder, red chilli powder, meat masala and ginger-garlic paste, mix well and sauté for 1-2 minutes. 
  3. Add tomatoes and mix well. Add salt and mix well. Reduce heat to medium, cover the pan with a lid and cook for 6-8 minutes. 
  4. Add green chillies, onions and coriander leaves, mix well and cook for 2-3 minutes. 
  5. Transfer into a serving bowl and serve hot with steamed rice.
