Breakfast Strawberry Cookies

What if breakfast meant strawberries and milk chocolate? These scrumptious cookies have chunks of fresh strawberries and milk chocolate. Double treat, what?

Ingredients

  • ¾ cup chopped fresh strawberries
  • 1½ cups refined flour (maida)
  • ½ cup oats powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup brown sugar
  • ¼ cup castor sugar
  • 1½ cups butter
  • 1 egg
  • 1 teaspoon vanilla essence
  • ¼ cup milk
  • ¼ cup oats
  • ¼ cup chopped milk chocolate
  • Halved almonds as required
  • Black coffee for serving

Method

  1. Preheat oven to 180º C.
  2. Sift together refined flour, oats powder, baking powder and baking soda into a large bowl.
  3. Take brown sugar in another bowl, add castor sugar and butter and beat with an electric beater till sugar dissolves and the mixture becomes light and fluffy.
  4. Add egg and mix well. Add vanilla essence and milk and mix well.
  5. Add the flour mixture, oats and milk chocolate and mix till well combined.
  6. Add strawberries and mix gently.
  7. Line a baking tray with a parchment paper. Divide the mixture into equal portions, shape each into a ball, flatten slightly and arrange on the baking tray.
  8. Press 1-2 halved almond on top of each cookie, keep the tray in the preheated oven and bake in preheated oven for 20-25 minutes. 
  9. Bring the tray out of the oven and let the cookies cool. 
  10. Arrange them on a serving plate and serve with black coffee.
