Ingredients
- 10-12 fresh strawberries, chopped
- 1½ cups chopped white chocolate
- 1 cup fresh cream
- 1½ cups whipped cream
- ½ teaspoon vanilla essence
- 3 tablespoons castor sugar
- A pinch of salt
- 1 teaspoon lemon juice
- Edible flowers for garnish
Method
- Heat fresh cream in a non-stick pan.
- Take white chocolate in a bowl. Add hot fresh cream and mix till the chocolate melts. Allow the mixture to cool completely.
- Gently fold in the whipped cream into the white chocolate mixture till well combined. Add vanilla essence and mix well.
- Transfer into individual small serving glasses. Refrigerate for 1 hour or till chilled.
- To make compote, heat a non-stick pan, add strawberries, castor sugar, salt and ¼ cup water and mix well. Cook till strawberries turn soft and pulpy.
- Switch the heat off, add lemon juice and mix well. Allow to cool completely.
- Take the chocolate mousse out of the refrigerator, place a portion of strawberry compote on top of the mousse in each glass, garnish with edible flowers and serve chilled.
