Balsamic Glazed Mushrooms

These mushrooms cooked in balsamic reduction with a sweet-sour taste is an easy-peasy recipe. Addition of edamame adds unique flavour and bite. Another great addition to your list of favourite Oriental main course.

Method

  1. Caramelize sugar in a shallow pan. Add balsamic vinegar, mix well and cook on medium heat for 6-8 minutes or till the mixture thickens.
  2. Heat oil in another shallow pan, add garlic and onions, mix and sauté till translucent. Add mushrooms, salt and red chilli flakes, mix and saute on high heat for 3-4 minutes. 
  3. Add the balsamic reduction, mix well and cook for 1-2 minutes.
  4. Add edamame and corn flour slurry and mix well. Add 1½ cup water, mix and cook for 1-2 minutes. 
  5. Add spring onion greens and mix well.
  6. For each serving spread some fried in a serving bowl, make a well in the centre, put some mushroom mixture in the well and serve hot.
