Ingredients
- 20-30 button mushrooms
- ½ cup balsamic vinegar
- 2 tablespoons sugar
- 2 tablespoons oil
- 2 tablespoons finely chopped garlic
- 2 medium onions, finely chopped
- Salt to taste
- 1 teaspoon red chilli flakes
- ½ cup frozen blanched-edamame, thawed
- 2 tablespoons corn flour slurry
- 3 tablespoons chopped spring onion greens
- Fried rice to serve
Method
- Caramelize sugar in a shallow pan. Add balsamic vinegar, mix well and cook on medium heat for 6-8 minutes or till the mixture thickens.
- Heat oil in another shallow pan, add garlic and onions, mix and sauté till translucent. Add mushrooms, salt and red chilli flakes, mix and saute on high heat for 3-4 minutes.
- Add the balsamic reduction, mix well and cook for 1-2 minutes.
- Add edamame and corn flour slurry and mix well. Add 1½ cup water, mix and cook for 1-2 minutes.
- Add spring onion greens and mix well.
- For each serving spread some fried in a serving bowl, make a well in the centre, put some mushroom mixture in the well and serve hot.
