Ingredients
- 2 cups boiled and grated sweet potatoes
- 4 slider buns, halved and toasted
- Mango chilli sauce as required
- 1 medium onion, finely chopped
- ¼ cup finely chopped mixed coloured capsicums
- 2 tablespoons finely chopped fresh parsley leaves
- ½ teaspoon smoked paprika
- Salt to taste
- Crushed black peppercorns to taste
- ½ teaspoon red chilli flakes
- Corn flour slurry as required
- Dried breadcrumbs as required
- Oil for deep frying
- Mayonnaise for drizzling
- Pickled onion roundels as required
- 4 cheese slices
- 1 small English cucumber, vertically sliced
- Cherry tomatoes for garnish
Method
- Take sweet potatoes in a large bowl, add onion, capsicums, parsley, smoked paprika, salt and crushed black peppercorns and mix till well combined. Add red chilli flakes and mix.
- Take small portions of the mixture and shape each portion into a ball and gently flatten to shape like tikkis.
- Heat sufficient oil in a kadai.
- Dip the tikkis, one at a time, into the corn flour slurry and coat with dried breadcrumbs.
- Gently slide the tikkis into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
- Apply some mango chilli sauce on the base half of the slider buns. Place a tikki on it, drizzle mayo, place a pickled onion roundel, a cheese slice, arrange some cucumber slices and cover with the top half of the slider bun. Secure the slider with the help of a toothpick, place each slider on a serving plate, garnish with cherry tomato. Serve.
