Ingredients

  • 1 cup Pro V Select Whole Natural Almonds
  • 2-3 tablespoons ghee
  • ¾ cup semolina
  • A generous pinch of saffron + to sprinkle
  • ¾ cup hot milk
  • ¾ cup sugar
  • ½ teaspoon green cardamom powder
  • Slivered Pro V Select Whole Natural Almonds to sprinkle
  • Blanched, peeled and slivered pistachios to sprinkle

Method

  1. Take Pro V Select Whole Natural Almonds in a bowl, add hot water and set aside for 3-4 hours. Drain and peel almonds.
  2. Transfer the almonds into a grinder jar and grind coarsely.
  3. Heat ghee in a non-stick pan, add almonds and sauté on medium heat for 1-2 minutes.
  4. Add semolina and saffron, mix and sauté for 5-6 minutes or till golden brown.
  5. Add 2 cups hot water and ¾ cup hot milk and mix well. Cover and cook on low heat for 4-5 minutes.
  6. Add sugar and green cardamom powder, mix and cook till sugar melts.
  7. Transfer into a serving bowl, sprinkle almonds, blanched pistachios and saffron strands on top. Serve.
