Ingredients
- ½ medium pineapple
- 2 medium sweet potatoes
- 2 tablespoons oil
- ½ teaspoon red chilli powder
- Salt to taste
- 2-3 tablespoons fresh pomegranate pearls
- 2-3 tablespoons chana jor garam
- 2-3 tablespoons masala peanuts
- ¼ teaspoon yellow chilli powder
- ¾ teaspoon chaat masala
- 1 teaspoon roasted cumin powder
- Black salt to taste
- 2-3 tablespoons date and tamarind chutney
- 2-3 tablespoons chopped fresh coriander leaves
- Fresh coriander sprigs for garnish
Method
- Peel, discard the core and cut pineapple into 1 centimetre pieces.
- Cut sweet potatoes into large roundels, put them into a pressure cooker, add sufficient water, cover with its lid and cook under pressure for 2 whistles.
- Open the lid when the pressure settles completely. Cool, peel and cut into 1 centimetre pieces.
- Heat oil in a pan, add sweet potatoes, red chilli powder and salt, mix and sauté for 3-4 minutes.
- Take pineapple pieces in a bowl, add pomegranate pearls, chana jor garam, masala peanuts, yellow chilli powder, chaat masala, roasted cumin powder and black salt and mix well.
- Add date and tamarind chutney, sweet potato and coriander leaves and mix with light hands.
- Transfer into a serving bowls, garnish with coriander sprigs and serve.
