Ingredients

  • ½ medium pineapple
  • 2 medium sweet potatoes
  • 2 tablespoons oil
  • ½ teaspoon red chilli powder
  • Salt to taste
  • 2-3 tablespoons fresh pomegranate pearls
  • 2-3 tablespoons chana jor garam
  • 2-3 tablespoons masala peanuts
  • ¼ teaspoon yellow chilli powder
  • ¾ teaspoon chaat masala
  • 1 teaspoon roasted cumin powder
  • Black salt to taste
  • 2-3 tablespoons date and tamarind chutney
  • 2-3 tablespoons chopped fresh coriander leaves
  • Fresh coriander sprigs for garnish

Method

  1. Peel, discard the core and cut pineapple into 1 centimetre pieces.
  2. Cut sweet potatoes into large roundels, put them into a pressure cooker, add sufficient water, cover with its lid and cook under pressure for 2 whistles.
  3. Open the lid when the pressure settles completely. Cool, peel and cut into 1 centimetre pieces.
  4. Heat oil in a pan, add sweet potatoes, red chilli powder and salt, mix and sauté for 3-4 minutes.
  5. Take pineapple pieces in a bowl, add pomegranate pearls, chana jor garam, masala peanuts, yellow chilli powder, chaat masala, roasted cumin powder and black salt and mix well.
  6. Add date and tamarind chutney, sweet potato and coriander leaves and mix with light hands.
  7. Transfer into a serving bowls, garnish with coriander sprigs and serve.
