Ingredients
- 1½ cups almonds
- 1½ cups milk
- 1 tablespoon vinegar
- 1½ cups refined flour (maida)
- 1 teaspoon baking powder
- Salt to taste
- ⅓ cup castor sugar
- 1 teaspoon vanilla essence
- ¼ cup melted butter + for cooking
- 2-3 tablespoons maple syrup (optional)
- Vanilla ice cream for serving
Method
- Preheat oven to 180º C. Transfer the almonds on a baking tray and roast for 8-10 minutes.
- Take milk in a bowl, add vinegar and mix well. Set aside for 5-10 minutes.
- Sift together refined flour, baking powder and a pinch of salt in a bowl.
- Add castor sugar and mix well. Make a well in the centre and pour the milk mixture gradually in well and whisk. Add vanilla essence and mix well.
- Add melted butter and mix well. Set aside for 5-10 minutes.
- Reserve 1-2 tablespoons of the roasted almonds and transfer the rest in a grinder jar, add a pinch of salt and grind to a smooth paste. Add maple syrup and grind till well combined and smooth. Transfer into a bowl. Chop the reserved almonds and spread on a plate.
- Heat a waffle maker, grease it with butter, pour some batter and spread it evenly. Close the lid and cook on medium heat for 6-8 minutes or till crisp. Make more waffles with the remaining batter.
- Remove the waffle from the maker and allow to cool slightly, cut it into 4 triangles and apply almond butter on top of each. Place one piece on top of the other piece so as to make 2 sandwiches.
- Apply some more almond butter on one side of each sandwich and roll in chopped almonds.
- Keep the sandwiches on serving plate and serve with vanilla ice cream.
