Ingredients
- 1 cup butter, softened
- 1 cup granulated sugar
- 1 cup eggs (approx. 4 eggs)
- A few drops of vanilla essence
- 1 cup refined flour (maida)
Method
- Preheat oven to 180° C.
- Take butter in a large bowl, add sugar and beat with an electric beater till well combined. Scrape the sides of the bowl and bring the mixture to the centre and continue to beat till it turns light and fluffy.
- Scrape the sides and bring the mixture to the centre, add the eggs, little at a time, and beat well after each addition. Add vanilla essence and continue to beat till the mixture turns fluffy and the eggs are well combined.
- Sift refined flour directly into the bowl and gently fold in till a smooth and light batter is formed.
- Transfer the batter into a greased cake tin of your choice till it is ¾ filled. Tap a few times to remove any air bubbles. Place the cake tin in the preheated oven and bake for 40-45 minutes.
- Bring the cake out of the oven and allow to cool slightly. Run a knife along the sides of the cake tin and de-mould the cake on a wire cooling rack.
- Cut into wedges or allow to cool completely and use as required.
